Recipe: Banana Berry Smoothie

I've always eaten breakfast in the mornings, so if I miss it, my day just doesn't start out quite right. But that doesn't mean that I always wake up in time to make eggs and waffles. My go-to quick breakfast is always a fruit smoothie. Its quick, easy, and with some granola, a nutritious and filling meal.

I use very few ingredients for each smoothie - yogurt, some frozen fruit, and some fresh fruit. I always add a banana or some frozen grapes, so no sugar is needed to sweeten up the (usually) berry smoothies. For a creamier texture, add less frozen berries and more bananas.

Serves: 1

  • 1 cup of yogurt
  • 1.5 cup of frozen strawberries and blackberries
  • handful of fresh blueberries
  • banana

Place everything in blender, and blend to desired consistency.

Pop on some granola, and let's start the day right!

Recipe: Deviled Eggs

Like I promised, it's cooking time! This summer, I'm trying out a bunch of quick and easy recipes to use next year at uni. This first recipe is one I learned from my dad years ago - deviled eggs. Preparation takes less than 15 minutes, pop it in the fridge for a bit, and it's ready to serve as a snack or side.

Serves: 3-4

Ingredients:

Picture
  • 4 eggs
  • 2 tbsp mayonnaise
  • paprika
  • cajun seasoning
  • a few sprigs of cilantro

Let's Get Started!

Picture
1. Boil and peel the eggs. Place the eggs in the fridge for 30 minutes. Refrigeration can be done at the very end, but I find that cool eggs are easier to cut.

3. Add mayonnaise and a pinch of paprika, and mix.

2. Half each egg and remove the yolks into a separate bowl.

4. Scoop the mixed yolks into the egg whites. Garnish with a pinch of cajun seasoning and a bit of cilantro.

And You're Done!

Wishlist: Books to Read (Part 1)

Now that I'm finished with all my exams (and frantic cramming), it's time for me to take a break and just relax! I've got a long list (in no particular order) of books that I really want to read this summer, recommended on Pinterest and by my favorite bloggers. I'm looking to finish up The 7 Habits of Highly Effective People by Stephen Covey before I dive into the list.

  1. Let's Pretend This Never Happened by Jenny Lawson - I'm dying to read this hilarious take on our daily lives.
  2. Eleanor and Park by Rainbow Rowell - I know I'm not supposed to judge a book by it's cover, but it looks so cute! And the themes of family, courage, trust, and first love are so relatable, it would make a great quick weekend read.
  3. Margot by Julian Cantor - I'm really fascinated by the idea of Margot, Anne Frank's older sister who survived the Holocaust.
  4. The Goldfinch by Donna Tartt - The Goldfinch sounds incredibly interesting: a suspenseful battle between a single person and fate.
  5. What Alice Forgot by Liane Moriarty - When marriages break, it comes as a gradual process, but Alice forgets the decade that went wrong and is thrown into the contrast of a perfect honeymoon and a disastrous divorce. I can imagine What Alice Forgot being touching and heartbreaking at the same time.

Any thoughts on these books or more recommendations?
